Learn about a California Date Farm.

Taste Test Sample Prep Instructions: Figs

• These instructions are based on enough figs for each student to taste 3 figs.
• See How do I obtain and prepare produce for taste tests?
• See How do I conduct taste tests in the classroom?
Figs
• Cut off the stem of each fig.
• Prepare 3 small dried figs for each student.
• Place 3 figs on a napkin and distribute to each student.
• Instruct the students to wait to taste their sample until they are told to start tasting.

Dates

  • Slice the date in half vertically, pull it apart, and remove the pit (if not pitted).
  • Cut each date horizontally. This will yield 4 cut pieces per date.
  • Place 2 pieces of dates on a napkin and distribute to each student.
    • Instruct the students to wait to taste their sample until they are told to start tasting.

  • Wash each baby carrot.
  • Place 2 baby carrots on a napkin and distribute to each student.

Jicama

  • Wash and scrub each jicama.
  • Use a knife to remove the outer skin. The skin can cause stomach aches if eaten.
  • Cut each jicama in half.
  • Place the flat part of the jicama on the cutting board. Slice the jicama into long, thin strips (like matchsticks).
  • Place about 3 sticks on a napkin and distribute to each student.
  • Instruct the students to wait to taste their sample until they are told to start tasting.

Taste Test Sample Prep Instructions: Butternut Squash

Butternut Squash

  • Wash the squash and trim off the ends.
  • Use knife to peel off the outer skin, cut lengthwise, and discard the seeds.
  • Place flat surface of squash on cutting board and cut into small cubes.
  • Place cubes on tray with parchment paper, place in oven, and bake at 400 F for 25 min – or until soft.
  • Remove from oven and let cool.
  • Place 2 cubes on a napkin and distribute to each student.
  • Instruct the students to wait to taste their sample until they are told to start tasting.

Cucumber - Resources

Watch how cucumbers are harvested at TVF Farms.

Taste Test Sample Prep Instructions

Cucumber

  • Wash the cucumber, trim off ends, and slice off outer skin.
  • Cut cucumber in half at midpoint. Cut each half again at midpoints. (One cucumber should produce 4 sections, each around 3 inches in length).
  • Slice each section lengthwise, place flat surface on cutting board, and cut into thin slices (similar to matchsticks).
  • Place 2 slices on a napkin and distribute to each student.
  • Instruct students to wait to taste their sample until they are told to start tasting.

Learn about the Dino Kale that grows at Go Green Agriculture in Encinitas, CA.

Taste Test Sample Prep Instructions: Kale

Kale

  • Wash kale. Use paper towel to absorb excess water from leaves.
  • If leaves are too wide/big, slice to make them easier to eat.
  • In large pan place kale and around 2 tablespoons of olive oil. Sauté the kale over medium heat, until leaves are softened. Season with salt and pepper.
  • Remove from heat and let cool.
  • Place 3 kale pieces on a napkin and distribute to each student.
  • Instruct students to wait to taste their sample until they are told to start tasting.

Taste Test Sample Prep Instructions: Bok choy

Bok Choy

  • Wash vegetable, trim off the very bottom portion (1/2 in), wash again to remove any remaining dirt
  • Cut bok choy in half lengthwise.
  • In large pan, place bok choy and around 2 tablespoons of olive oil. Sauté over medium heat, until leaves are softened. Season with salt and pepper to taste.
  • Remove from heat and let cool.
  • Place ½ of bok choy on a napkin and distribute to each student.
  • Instruct students to wait to taste their sample until they are told to start tasting.

Swiss Chard

  • Wash the chard and then cut off the stalks from the leaves.
  • Chop leaves into squares.
  • In large pan place chard leaves and around 2 tablespoons of olive oil. Sauté over medium heat, until leaves are softened. Season with salt and pepper to taste.
  • Remove from heat and let cool.
  • Place 2 squares on a napkin and distribute to each student.
  • Instruct students to wait to taste their sample until they are told to start tasting.

Taste Test Sample Prep Instructions: Peaches

Peaches

  • Wash peaches.
  • Cut into peach starting at stem end. Cut along the fruit by rotating the peach and keeping the blade against the pit.
  • Hold peach and twist each half in different directions to pull apart. Remove the pit.
  • Slice each half of peach into 6 slices.
  • Place 1 slice on a napkin and distribute to each student.
  • Instruct the students to wait to taste their sample until they are told to start tasting.

Taste Test Sample Prep Instructions

Watermelon

  • Use damp towel to wash outer layer of watermelon
  • Cut watermelon in half lengthwise, and slice each half again lengthwise (should have 4 quarters from one melon)
  • Slice melon wedges, cutting down to the rind, to make cubes.
  • Carefully slice off rind from wedges with a sweeping motion.
  • Place 2 melon cubes on a napkin and distribute to each student.
  • Instruct students to wait to taste their sample until they are told to start tasting.

The Harvest of the Month calendar for San Diego County was developed by UC San Diego Center for Community Health with input from Community Health Improvement Partners Food Systems’ San Diego County Crop Availability Report and Escondido Union, San Ysidro, and Vista Unified School District Nutrition Services. The seasonal calendar allows the flexibility to procure fruits and vegetables from different sources, such as local farmers, school gardens or local businesses, to encourage monthly Harvest of the Month classroom taste-tests and lessons. The Harvest of the Month Calendar features six different fruits and vegetables each season.
