UC San Diego Eat Well Paper

The Healthy Campus Network (HCN) is proud to present the first case study on sustainable food practices used across UC San Diego.  This paper is a collaboration of HCN Eat Well working group members from across the university working to increase access to healthy and sustainable food, address food nsecurity, and promote good nutrition.  Contributors include staff, faculty, and students from Dining, Family Medicine and Public Health, Facilities Management, Healthy System Nutrition Sevices, Sustainability, and Student Affairs.  The paper features campus and hospital system efforts to improve healthy food access, decrease hunger, and increase the environmental sustainability of food, from procurement through food waste reduction and diversion.
